HONEY - "food of gods"
Since the ancient times, people have known of honey’s medicinal attributes and they have appreciated it not only as food, but also as medicine. Honey also contains some proteins, ferments, hormones,… and it also includes pollen. The colour of honey depends on the most dominant honey-bearing cultures present at the pastures, on the quality of sun light, soil ... Darker types of honey, especially those gathered from the wood pastures, are richer in minerals, particularly iron, copper and magnesium. The ferments present in honey provide it with special features that can not be reproduced artificially. The levels of vitamins in honey vary, mostly depending on the type of the herbs from which it was gathered. The most common vitamins are the group B vitamins (riboflavin, aneurin, pyridoxine, panthothenic acid, nicotinic acid etc…). Certain sorts of honey also include vitamin C, carotene and vitamin E.
Nutritional qualities of honey.
Honey is easily digestible as food and it is almost fully utilized by the organism. In addition to the above mentioned nutritional qualities, honey also has numerous medicinal and antioxidant properties. Due to a high share of simple sugars (glucose and fructose), the honey is immediately and easily used by the organism as a high-quality foodstuff (for feeding cells, generating bodily temperature, muscle work …) unlike white sugar which is exclusively a sweetener, without nutritive properties of honey and with twice more calories.

It is taken in the morning to cleanse the organism from unhealthy substances which accumulated during the night and also in the evening to calm the organism. It is best when consumed with liquid (tea, water…) which should not be warmer than 45°C as otherwise the most valuable contents of honey are lost. It may be consumed instead of white sugar because it contains easily-digestible fruit and grape sugar (glucose and fructose).
